Prep Time: 20 minutes
Cook Time: 1 hour
Total Time: 1 hour 20 minutes
Serves: Makes 4 Servings
Ingredients
- 1/2 cup of old fashioned rolled oats
- 1/4 cup hazelnut chocolate spread
- 1/4 cup almond butter
- 2 tbsp. honey
- 4 oz. cream cheese, divided
- 1/2 tsp. salt
- 1 scoop (about 25 g) chocolate or vanilla protein powder
- 2 oz. cold brew
- Cocoa powder, for dusting
Method
- In a food processor, combine rolled oats, hazelnut chocolate spread, almond butter, honey, 2 oz. cream cheese, salt, protein powder, and cold brew. Pulse slowly until mixture just comes together to form a coarse, sticky dough. Chill for 1 hour.
- Divide dough into 12 balls about 1-1/2 inches in size. Cut the remaining cream cheese evenly into 12 pieces. One at a time, press a deep thumbprint into each dough ball and fill it with a piece of cream cheese, gently pressing the mixture to cover the cream cheese with dough. Reroll to shape and repeat with remaining dough.
- Dust protein bites with cocoa powder and eat immediately, or store in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 3 months.
Options: Try adding flaxseed or chia seeds, or chopped nuts and toasted coconut.
