Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour 20 minutes

Serves: Makes 4 Servings

Ingredients

  • 1/2 cup of old fashioned rolled oats
  • 1/4 cup hazelnut chocolate spread
  • 1/4 cup almond butter
  • 2 tbsp. honey
  • 4 oz. cream cheese, divided
  • 1/2 tsp. salt
  • 1 scoop (about 25 g) chocolate or vanilla protein powder
  • 2 oz. cold brew
  • Cocoa powder, for dusting

Method

  1. In a food processor, combine rolled oats, hazelnut chocolate spread, almond butter, honey, 2 oz. cream cheese, salt, protein powder, and cold brew. Pulse slowly until mixture just comes together to form a coarse, sticky dough. Chill for 1 hour.
  2. Divide dough into 12 balls about 1-1/2 inches in size. Cut the remaining cream cheese evenly into 12 pieces. One at a time, press a deep thumbprint into each dough ball and fill it with a piece of cream cheese, gently pressing the mixture to cover the cream cheese with dough. Reroll to shape and repeat with remaining dough.
  3. Dust protein bites with cocoa powder and eat immediately, or store in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 3 months.

Options: Try adding flaxseed or chia seeds, or chopped nuts and toasted coconut.
